Deluxe carrot cake 1 (26oz) namaste foods' spice cake mix ½ cup oil 1½ cups grated carrots ½ cup flaked coconut (unsweetened or sweetened) 3 eggs ½ cup raisins ½ cup chopped nuts (optional) 1 (8 oz) can crushed pineapple, including juice heat oven to 350° f. Lightly spray 9x13 pan or two 9" round cake pans with non-stick spray. Combine mix, oil, pineapple juice and eggs and mix well. Fold in remaining ingredients. Bake for approximately 40-45 minutes. Cake is done when toothpick inserted in center comes out clean. Excellent with cream cheese frosting and toasted coconut garnish.;vegan spice cake make as directed above, except replace eggs with namaste foods' egg replacer. Mix up replacement 'eggs' as directed on package. Other additions stay the same. Other egg replacements may work, but may require experimentation.;you will need: eggs or egg replacer oil or butter water see vegan spice cake directions below directions for full package (9x13 or two 9" layers) 1 heat oven to 350°f.
