First off, you will need a handful of items to get started.
- 3 lbs. skinless organic/natural chicken breast
- 1/2 tsp. paprika
- 1/2 onion, chopped
- 3 tbsp. butter
- 1 cup mushrooms, halved
- 1 16 oz. jar artichoke hearts, drained
- 1/2 tsp. thyme
- 1/2 cup dry, white wine
- 1/2 cup organic chicken broth
- Salt and pepper just before serving
Coat the chicken with paprika.
Melt a tbsp. of butter in a heavy bottomed pan over medium heat. Brown chicken in batches on all sides, about 5 minutes for each batch, and transfer to slow cooker.
Melt the remaining butter in the pan and saute the onions for 5 minutes until translucent.
Add the mushrooms and artichokes and cook another 5-8 minutes until mushrooms are slightly browned, then transfer mixture to the slow cooker.
Combine the herbs, broth and white wine, pour over the chicken in the slow cooker and cook on low for 6-8 hours.
Salt and pepper to taste and then serve.
