Namaste crepes combine 1-1/2 cups mix, 2 cups water (more or less to desired consistency), 2 tablespoons oil, 2 eggs and pinch of salt and blend well. Preheat 12" skillet or crepe pan on medium heat. Spray non-stick spray on bottom of pan. Pour about 1/4 cup batter to cover pan with a thin, even coat. Cook until lightly brown on the bottom. Loosen with rubber spatula and flip crepe, then cook until brown or top is dry. Remove and keep crepes separated with wax paper or other liner to keep them from sticking together. Stir batter between crepes and spray pan each time. You may need to add more liquid as it sits and absorbs moisture. Spoon your favorite filling in the crepe, roll and serve!;you will need: 2 eegs 2 tbsp. Oil water or milk (any kind) directions for one batch of waffles 1 combine 2 eggs, 2 tablespoons oil, 3/4 cup water or milk (any kind). Add to 2 cups of dry mix. Blend well. Add more liquid, if needed. 2 preheat waffle iron to medium (350°f) heat. Spray preheated waffle iron with non-stick cooking spray. Pour batter onto waffle iron to cover bottom. Cook until golden brown. Serve hot. Yield: 5-6 waffles directions for one batch of pancakes 1 follow directions above decreasing water to 1/2 cup. (if you like your pancakes thinner, you can add more liquid). Batter will thicken as it stands. 2 pour onto preheated sprayed pan or griddle. Cook until bubbly on top edges and golden on bottom. Flip and cook until golden on bottom. Yield: 6-8 pancakes. Add favorite toppings and enjoy! notes: both waffles and pancakes can be frozen and reheated in toaster or toaster oven. Adding spices and fruit such as cinnamon and berries makes a tasty addition!
