Cooking Instructions:
What you need (makes 12 cupcakes) † not included 1 ½ cups cupcake mix 3 tbsp milk † 3 tbsp pumpkin puree † ¾ cup egg whites † 2 tsp vanilla extract † 3 tbsp cooking oil † instructions preheat oven to 350° & generously grease cupcake pan & set aside beat the egg whites on high for 2 min until stiff, then add milk, vanilla extract, pumpkin, & cooking oil, & beat for 15 seconds on medium/low speed. Then fold in 1 ½ cups of dry mix with a spatula until batter is smooth, but do not overmix! pour batter into metal cupcake pan with paper cup liners & bake in oven for 12 min at 350°. A toothpick can be used to check readiness if needed (bake time may vary by oven) remove from oven & let cool for 5 min in pan, then remove cupcakes & place on cooling rack to cool completely before icing
