[Recipe] Betty's Christmas Eggnog
Betty's Christmas Eggnog is a long standing family tradition around the holidays. Every year we all look forward to grandma's famous eggnog and this year we wanted to share the recipe with all of you! Enjoy!

INGREDIENTS:
8 large eggs, two separated 3/4 cup superfine sugar 1/8 tsp. salt 2 1/2 cups heavy whipping cream 2 cups whole milk 1/2 tsp. freshly grated nutmeg + more for garnish 1 tbs. pure vanilla extract |
DIRECTIONS:
Combine the six whole eggs, two egg yolks, sugar, and salt in med. mixing bowl and whisk together.
Heat two cups of heavy cream with milk in a large saucepan over med. low heat.
When the cream and milk are hot, ladle 1 cup into the egg mixture and whisk to incorporate.
Pour the egg-milk mixture into the hot cream mixture and continue to cook, stirring continuously til the mixture thickens enough to coat the back of the spoon, 3-5 minutes.
Remove the pan from the stove and strain the custard immediately through a fine mesh sieve to remove any coddled egg.
Allow the custard to cool for 10 minutes before proceeding. Add the vanilla and nutmeg into the eggnog and stir well to incorporate.
Beat the two egg whites to soft peaks in a clean mixing bowl and fold them into the custard base.
In a separate bowl beat the remaining 1/2 cup whipping cream to soft peaks and fold into the eggnog as well.
Chill until ready to serve. Add grated nutmeg and garnish with it.
TIPS:
Grandma improvises by eliminating the egg whites and puts all whipping cream instead.
