[Recipe] Brussels Sprouts with Sesame Seeds Casserole

It is the perfect time a year for Brussels Sprouts!  This casserole would make a great dinner on its own or an amazing Thanksgiving side dish to pass!  Happy Cooking!

INGREDIENTS:

1 small onion, diced

1 green pepper, finely chopped

1 medium leek, chopped

1 clove garlic, minced

1 tablespoon coconut oil

3 tablespoons sesame seeds

1 tablespoon oregano

1 cup cottage cheese

1 tablespoon flour or gluten free flour

2 tablespoons of ground flax seed

2 tablespoons lemon juice

1 tablespoon tahini (seseme butter)

1 teaspoon sesame oil

1/4 cup chicken stock

3 1/2 cups brussels sprouts, shredded and steamed

1/2 teaspoon paprika

DIRECTIONS:

Saute the onion, pepper, leek and garlic in oil over medium-low heat for 10 minutes.

Stir in the sesame seeds and oregano and saute 3-5 minutes more.

In a deep, oiled 2 quart baking dish, combine the cottage cheese, flour and flax seed and mix well.

Fold in the onion mixture.

In a small bowl, combine the lemon juice, tahni, sesame oil and stock.  

Blend well, preferably with a whisk.

Alternate folding the tahini mixture and the brussells sprouts into the cottage cheese mixture.

Pat down and cover tightly.

Bake at 300 for 15 minutes.

Sprinkle with paprika and bake 15 minutes more.

Serving Size: 4-6 as a side dish
