[Recipe] Easy Pumpkin Bread
It’s the perfect time of year for all of our favorite pumpkin treats! If your house is anything like mine though, trying to find spare time for baking is a rarity.
This is why I can always count on my Aunt Kathy for a quick, easy and delicious holiday recipe. With less than 15 minutes of prep time, this perfect fall treat is sure to please family and friends
Ingredients:
1/3 cup coconut oil
1 cup canned pumpkin
3 eggs
2 1/3 cup Pancake Mix (Can substitute for gluten free pancake mix)
1 1/4 cup sugar
2 tsp cinnamon
1/2 cup raisins
Directions:
Heat oven to 350º. Grease bottom of loaf pan.
Stir all ingredients except raisins with fork until moistened.
Beat vigorously 1 minute. Stir in raisins.
Pour in 1 or 2 loaf pans and bake 45-55 minutes.
Cool 5 minutes. Loosen sides with knife and remove from pan.
