[Recipe] Gluten Free Flourless Pizza w/Pears, Candied Bacon, and Caramelized Onions

INGREDIENTS:

8 oz cream cheese

1 cup ricotta cheese

2 large eggs

1/2 cup Parmesan cheese

4 slices of bacon

1/2 cup brown sugar

1 tbs unsalted butter

2 lg or 3 medium white or yellow onions, halved and thinly sliced

4 oz mascarpone cheese

2 bosc pears, cored and thinly sliced and sprinkled with fresh lemon juice

1 tsp fresh thyme

black pepper

DIRECTIONS:

Preheat oven to 400 degrees. 

Line one rimmed-baking sheet with foil and top it with a wire rack and spray another baking sheet with gluten-free, non-stick cooking spray then line it with parchment paper.

Mix cream cheese with ricotta until blended. Add eggs and Parmesan cheese, mix well.

Pour batter into parchment lined baking sheet. Put the bacon in a large freezer bag with brown sugar and shake until coated. Lay bacon on wire rack. Put both sheets in oven and bake for 20-25 min until crust is lightly brown and bacon is crispy.

Chop bacon into pieces, set aside.

Let the crust cool, then remove it with the parchment paper on a baking sheet and put it into oven for an additional 5 minutes. Remove and let crust completely cool.

Prepare the onions by combining olive oil and butter in skillet. Add onions and turn heat down to low. Let onions slowly caramelize (about 40 min).

Assemble the pizza. Spread mascarpone cheese over crust. Top with onions, bacon and pears. Bake for 10 min. 

Sprinkle with thyme leaves and black pepper.
