[Recipe] Gluten Free Paleo Easy Baked Chicken
Looking for a quick and easy healthy recipe for dinner? This Gluten Free, Paleo friendly recipe accomplishes this with as little as 10 minutes of prep time! It is quick, easy and delicious so it's no wonder its a family dinner time favorite! What a delicious way to keep your New Years Resolution to eat healthy this year!
Ingredients:
2 - 4 Free Range Organic Chicken breasts (per person count) Organic Spinach (enough to line the bottom of a 9x13) 1 Organic Tomato or 1 Can Diced Organic Tomatoes 1 Organic White or Yellow Onion Southwestern spices (can switch with anything to change up the flavor of dish) 1 Bag Shredded Organic Mozzarella (optional) Basmati or Brown rice (per person serving) |
Directions:
Preheat oven to 375º. Line bottom of 9x13 baking dish with spinach and top with the chicken broth. Dice up tomato and onion and set aside. Rinse chicken breast, place on top of spinach and coat with the spices. Add the tomato and onion over top. Cover and bake for 30 minutes or until chicken is cooked thru. (Time may vary depending on size of the chicken breast) Optional - add mozzarella to top and put back in oven for 2 minutes to melt. Serve over bed of rice. |
