[Recipe] Gluten Free Peppermint Ice Cream Pie

Looking for the perfect dessert for your holiday party?  Gluten free peppermint ice cream pie is a quick, easy and delicious choice.  The best part is, you can make it days or weeks ahead to help avoid all the last minute holiday baking!

INGREDIENTS:

Gluten free pie crust

1 quart natural peppermint ice cream or gelato softened 

1 Container chocolate syrup

1 Container vanilla frosting

1 Jar chocolate fudge

1 Package natural peppermint candies

DIRECTIONS:

Spread a layer of chocolate fudge about 1/2" thick along the bottom of the pie crust

Freeze for about 20-30 minutes until firm

Use softened ice cream and fill pie crust leaving about 1/4" from the top

Gently smooth out the top and put in the freezer until hardened

Remove from freezer and drizzle chocolate sauce in desired pattern

Pipe vanilla frosting around the edge of the pie 

Decorate with peppermint candy as desired

Put back in the freezer uncovered until hardened

Pull out and wrap well and freeze

Remove from freezer to thaw about 20 before you are ready to serve

Note: Whip cream or tru whip can be used instead of vanilla frosting but do not apply until just before you serve as the whip cream will not hold up well in the freezer.
