[Recipe] Gluten Free Pumpkin Bars
Having a craving for all things pumpkin? Definately check out these gluten free pumpkin bars with cream cheese frosting this fall season! These can be a sweet treat at home, a fall favorite to share at a party or the perfect addition to your Thanksgiving dessert menu! They can be made with or without the cream cheese frosting based on preference. INGREDIENTS:
Pumpkin Bars 4 eggs1 2/3 cups sugar 1 cup coconut oil (refined) 1-16 oz can pumpkin 2 cups gluten free flour 2 tsp baking powder 2 tsp cinnamon 1 tsp salt 1 tsp baking soda |
Cream Cheese Frosting
1-3 oz pkg cream cheese
1/2 cup butter
1 tsp. vanilla
2 cups sifted confectionery sugar
Pumpkin Bars Pre-heat oven to 350º Beat together eggs, sugar, oil and pumpkin until light and fluffy. Stir together flour, baking powder, cinnamon, salt and baking soda. Add to pumpkin mixture and mix thoroughly. Spread batter in ungreased 15x10x1 or 9x13x2 inch pan. Bake for 25-30 minuntes Cream Cheese Frosting Cream together cream cheese and butter Stir in vanilla Add powdered sugar, a little at a time, beating well, till mixture is smooth Spread on cooled bars |
