[Recipe] Scottish Eggs with a Gluten Free Option

Serving brunch for the holidays?  Scottish eggs are a tried and true family recipe that never disappoints!  They can be gluten free or not depending your needs.  

INGREDIENTS:

1 lb of pork sausage

1/3 cup of dry bread crumbs or gluten free bread crumbs

1 egg slightly beaten

8 hard cooked eggs, peeled

8 oz crescent dough (do not use for gluten free recipe)

DIRECTIONS:

Heat oven to 450º

In a small bowl combine sausage, bread crumbs, eggs and mix well

Divide into 8 equal portions, shape in patties

Wrap sausage around egg

Place on ungreased cookie sheet

Bake for 15-20 minutes until sausage is cooked through

Drain on a paper towel

Cool for 10 minutes

If using cresent roll:

Reduce oven to 375º

Separate triangle from crescent roll.

Wrap around sausage 

Bake 12-15 minutes until brown 

Cut into wedges. Serve warm

Note:  The eggs and sausage portion can be made up a day ahead and rewarmed in the oven.
