18 large fresh mushrooms
3 tbsp finely chopped celery
1 tbsp grass fed butter
1/2 cup finely chopped apple
2 tbsp dry bread crumbs (gluten free if preferred)
2 tbsp finely chopped walnuts or pecans
1 tbsp crumbled blue cheese
1 tbsp fresh parsley
1 tsp lemon juice
Remove stems from mushrooms; set caps aside. Chop stems, reserving 1/3c.
In a small skillet, saute chopped mushrooms and celery in butter. In a small bowl
Combine the mushroom mixture, apple, brad crumbs, walnuts, blue cheese, parsley and lemon juice.
Place mushroom caps on a greased cookie sheet; stuff with apple mixture.
Bake at 375 degrees for 15-20 min. Serve warm
