[Recipe] Bone Broth Chicken Noodle Soup - Gluten Free

Looking for something to warm you up this winter?  Bone broth chicken noodle soup is sure to help fight those winter blues!  This delicious recipe will not only keep you warm but is power packed with vitamins and minerals your gut will love!

Ingredients:

2 whole cooked organic rotisserie chickens

Additional organic chicken bones from your butcher *optional*

Purified water (enough to cover the bones in the pot)

¼ to ½ cup apple cider vinegar, depending on the size of the pot

1-2 whole garlic cloves

4 large organic carrots scrubbed and chopped

3 stalks organic celery washed and chopped

1 medium onion

3-5 teaspoons sea salt (to your taste)

1 package gluten free noodles

Fresh basil or parsley, chopped *optional*


Directions:

Remove all meat from rotisserie chickens and set aside

In a large stockpot or slow cooker add rotisserie chicken bones and add enough purified water to cover all bones by at least 1 inch.

Add vinegar and garlic cloves

Allow to simmer on medium heat (not boil) for 1-2 hours. It may be necessary to add additional purified water during this process to ensure the bones are always completely covered. Switch to low heat for the remainder of the cooking time.

When broth is complete, remove from heat.

Pour the broth through a fine mesh strainer and discard all solid contents.

Rinse stockpot or slow cooker and add the broth back in.

Add chicken, chopped carrots, celery, onion and salt

Allow to simmer until veggies are cooked through

Cook noodles in a separate pot and add just before serving.

Add additional salt, basil, parsley or other herbs to taste

Serve and enjoy!
