[Recipe] Chicken Mulligatawny Soup

Chicken Mulligatawny Soup is the perfect solution to warm you on a cold winter day!  We suggest batch cooking this recipe to enjoy for the week without having to come up with a new meal plan each night.  Happy Cooking!

1 tbsp coconut oil

2 med onions chopped

3 cloves garlic, crushed

2 tsp grated ginger

2 tbsp madras curry paste

1 large carrot

1 cinnamon stick

1 cup red lentils

2 med potatoes, chopped

5 cups chicken stock

2 chicken breasts, chopped

3/4 cup coconut milk

2 tbsp lemon or lime juice

2 tbsp chopped coriander

handful of bean sprouts (optional)

handful of snow pea sprouts (optional)


Heat oil on medium low and add onion, garlic, ginger and paste - fry until soft.

Add carrot, cinnamon, lentils, potatoes and stock - simmer covered on low for about 30 mins or until potatoes are soft.

Process half the mixture until smooth and return to the pan.

Add the chicken, coconut milk and lemon juice and simmer for about 10 mins or until the chicken is cooked.

Serve & Enjoy!
