[Recipe] Salmon Fillets with Orange-Basil Sauce

Love this recipe!  It is quick, healthy and delicious!  Add a few orange slices and garnish with basil and it will look like you have prepared a gourmet meal.  Happy cooking!

INGREDIENTS:

6 4 oz. boneless, skinless fresh or frozen salmon fillets, cut 1-inch thick

1/4 cup frozen orange juice concentrate, thawed

3 tbsp. olive or coconut oil

2 tbsp. fresh basil or 2 tsp. dried basil, crushed

2 tbsp. water

1 tbsp. snipped fresh mint or tarragon or 1 tsp. dried mint or tarragon, crushed

1 tbsp. Worcestershire sauce

2 cloves garlic, minced

Fresh mint or basil sprigs (optional)

DIRECTIONS:

Thaw fish, if frozen. 

For sauce, combine concentrate, oil, the snipped basil, water, the snipped mint or tarragon, Worcestershire sauce, and garlic in a bowl.

Brush salmon with sauce.

Grill fish on the greased rack of an uncovered grill directly over medium coals or bake in the oven for 8 - 12 minutes or just until salmon begins to flake easily when tested with a fork.  If grilling, turn once halfway through grilling time and brushing often with sauce. Garnish with orange slices, mint or basil sprigs, if desired.
